Borscht


This classic cabbage and beet soup is popular throughout Russia and the Slavic region of Europe. Borscht is hearty, healthy, and fun to say.


SERVES 2 TO 4

2 to 3 cups chopped red cabbage
1 beet, peeled, shredded, and rinsed
2 tablespoons red miso
1 clove garlic
1 cup filtered water

Place the cabbage, beet, miso, garlic, and water in a blender and blend until smooth. Pour into bowls and serve.
