Peanut-Curry Dressing
From India to Thailand, curry is used in many cuisines. Curry powder is actually a mixture made of many spices from a variety of plants.
Turmeric, ginger, ajowan, and other spices are all often used to make curry powder. There is also a curry tree that produces a very aromatic and
spicy leaf that is a common ingredient in many Indian curry powders.
MAKES 2½ CUPS
1 cup soaked peanuts, drained
1 teaspoon curry powder
1 tablespoon Bragg Liquid Aminos
½-inch piece fresh ginger, peeled
1 cup filtered water
Combine all of the ingredients in a blender or food processor and blend or pulse until smooth. The dressing can be covered and refrigerated for up
to 2 days.
