Herbed Essence Bread


Breads made with herbs are aromatic and savory. In addition to traditional square loaves, this bread may be pressed into flat circles or squares,


rounded loaves, or even stars or hearts.


MAKES 4 LOAVES

2 cups sprouted grain, such as wheat, rye, kamut, quinoa, or barley
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced fresh cilantro
2 tablespoons minced fresh basil
¼ cup shredded carrot
2 tablespoons minced onion
1 clove garlic, pressed
2 cups flax seeds

Grind the grain in a homogenizing juicer and place it in a large bowl. Add the parsley, cilantro, basil, carrot, onion, and garlic to the grain and mix
well. In a blender cup or blender, grind the flax seeds into a fine powder. Add the flax powder to the bowl and mix well. Divide the dough into 4 equal
portions and press each into a loaf or another shape. Using one of the methods described here, dehydrate the bread for 8 hours and flip. Dry for 12
to 15 hours more, depending on the moisture level desired.
