Green Dream
Spirulina, an ocean algae, contains more protein than any other food on the planet. I talk to people all the time who ask me where to get protein
in a vegetarian diet. I always tell them that beef is about 25 percent protein; milk, 30 percent; soy beans, 35 percent; and spirulina, a whopping
70 percent protein! Besides its fabulous protein content, spirulina contains every vitamin and mineral. That’s a lot of nutrition for one of the
simplest single-celled life forms on earth. (Pictured here, far right)
SERVES 2
4 dates, seeded
1½ cups filtered water
2 papayas, peeled, seeded, and chopped
1 cup coconut water
4 bananas, peeled, frozen, and thickly sliced
1 to 2 tablespoons spirulina powder
Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Transfer the dates and their soaking water to a blender
and blend until smooth. Add the papayas and the coconut water and blend to combine. Add the frozen bananas and the spirulina and blend until
smooth. Pour into a tall glass and serve.
