Banacado
One day while traveling the road to Hana, on Maui, I had the pleasure of harvesting both a ripe stalk of bananas and some ripe avocados.
Being hungry after a long drive, I began munching on the bananas when I noticed that one of the avocados had gotten squished. I started eating
the mashed avocado along with the banana and discovered a delicious new combination. Later I found out that the banana-avocado
combination is a Hawaiian tradition.
SERVES 1 OR 2
2 dates, seeded
2 cups filtered water
4 bananas, peeled and thickly sliced
½ avocado, peeled and pitted
Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving the liquid. Place the bananas,
avocado, and the reserved liquid in a blender and blend until combined. Add the dates and continue blending until a thick, smooth consistency is
achieved. Serve in a tall glass.
