Ruby Cooler (Sun Tea)


Sun tea uses concentrated sunlight to extract flavor and essence from herbs, fruits, and flowers. The pH of the water determines how fast it will


extract the tea. The more alkaline the water, the faster it will extract the tea.


SERVES 2 TO 4

⅓ cup dried hibiscus leaves
⅓ cup dried rose hips
6 cups filtered water
½ cup freshly squeezed lemon juice
1 cup freshly squeezed orange juice
½ cup pineapple juice (optional)
2 to 4 lemon or orange wedges, for garnish

Place the hibiscus leaves and rose hips in a large glass jar and cover with the water. Cover the top and set the jar in direct sunlight for 3 to 6 hours,
until the taste is to your liking. Stir in the lemon, orange, and pineapple juices and refrigerate until chilled, about 2 hours. Serve in tall glasses,
garnished with a wedge of lemon or orange.
