Dr. Ann Wigmore, the woman who brought sprouts and wheatgrass to the world, was a major proponent of rejuvelac, a cultured grain drink full of


healthy bacteria and enzymes helpful in the digestion of raw food (particularly when transitioning to a raw food diet). Drinking rejuvelac is also


an excellent way to bring positive flora into the intestinal tract, thereby bringing the body into a more alkaline balance and strengthening the


immune system.


SERVES 2 TO 4

1 cup sprouted wheat berries or sprouted quinoa, with sprouts of equal length as the seed
7 cups filtered water

Place the sprouts in a clean ½-gallon jug and add the water. Cover with a screen or leave open. Place the jug in a warm area, out of direct sunlight,
and soak the sprouts overnight. Strain through a wire-mesh strainer, discarding the soaked wheat berries. The rejuvelac should smell slightly sour.
Refrigerate until chilled before serving.
