proteins or solids will stick
to the bottom of the pan.
Let the butter cook for
another 3 minutes, being
careful not to let it brown,
and turn off the heat. Set
it aside for 30 minutes,
then strain through a fine-
mesh or cheesecloth-
lined strainer into a bowl.
The butter should now be
clear of all solids. Scale
