After 35 to 40 minutes of
baking quickly remove the
sheet pan from the oven
and close the oven door.
Remove the baked puffs
and immediately place the
sheet pan with the base
back in the oven. You do
not want to interrupt the
baking of the base for too
long. Bake for another 15
minutes, until golden
brown, and let cool
