of the freezer and gently
press the sablée disk onto
the bottom of the frozen
mousse. Unmold the cake
onto a platter. If you have
used a metal mold you
will need to dip the mold
¾ of the way into a bowl
of hot water for about 30
seconds. Remove from
the water, dry the mold
