Mediterranean Garbanzo
Bean Salad


Legumes, such as garbanzo beans, provide
the great combination of protein and
fiber—both of which help you remain
feeling satisfied until your next meal.


Ingredients:


12 cups salad greens
1 cup garbanzo beans
4 TBS red onion, chopped
2 TBS Parmesan cheese
2 medium tomatoes, chopped
2 TBS extra virgin olive oil
2 TBS lemon juice
Salt and pepper to taste


Directions:


Combine all salad ingredients and toss with olive oil and lemon juice.
