added to Indian pickles (achaar), and
used to top Indian breads, including
naan.
- NUTMEG (JAIPHAL): This spice is
actually the seed of an evergreen tree,
and the spice known as mace is the
covering of this seed. Nutmeg can be
purchased whole, in which case it is
slightly wrinkled and beige-brown. It
can also be purchased as a pre-ground
powder. It’s not used extensively in
Indian cooking, but my family uses it in
our garam masala recipe.
