For the sake of full disclosure, I must
add my feelings on processed foods
here. So many ingredients now are
rigged to taste and feel like meat. I use
some of them in my cooking. However, I
never encourage making processed food
a significant part of your diet. Whether
you eat meat or maintain a meat-free
diet, processed foods should be
“sometimes,” not “always,” foods. If you
read the labels on veggie sausages and
some meat-substitute crumbles, you’ll be
shocked to see how much salt they
contain. You don’t have to eliminate
these items entirely, but use them only to
enhance your key ingredients: fresh fruit
and veggies, beans, lentils, and grains.
