traditional roti (also called chapati or
phulka), an unleavened flat bread. This
flour is traditionally whole wheat, but in
recent years, food distributors have
begun adding the more processed, less
healthy white flour called maitha. When
you purchase this flour, make sure its
label reads “100 percent whole wheat.”
Also, be aware that chapati flour is
different from the whole-wheat flour
found in regular grocery stores. If you try
making rotis with regular whole-wheat
flour, they’ll be heavier, darker, and a
little bitter. If you don’t have an Indian
grocery close by, look for whole-wheat
pastry flour made from whole white
wheat. You can also substitute a mixture
of one part whole-wheat flour and one
axel boer
