It’s also great to have a food processor
handy to quickly grind down ginger root,
garlic, and onions for basic masalas.
DOUBLE BOILER: This is essentially a
cooking vessel with two compartments
that allows you to boil water on the
bottom to cook items in the top
container. Typically, it’s used to melt
chocolate. I use my double boiler to
steam dhokla.
- KETTLE: If you need to add water to
dishes as they cook, it’s best to add
boiling water so you don’t lose precious
