protein as long as you combine your
legumes with grains. Both categories are
deficient in different amino acids, but
you can make up for the individual
deficiency by combining them—not even
on the same plate, but in a general, well-
rounded diet. So if you had oatmeal in
the morning, the beans you eat in your
salad later in the day will balance out
your protein intake for the day.
Now that the West has started to
overcome this nutritional learning curve,
it’s time to learn how to cook this
amazing category of food. I’ve been on a
