green and still in the pods. My girls love
to take the pods, open them up like
peanut shells, and gobble up the raw,
green chickpeas inside. Dry out these
green, wrinkled seeds, and you’ve
essentially got the dried chickpeas you
buy from the store. Rarely is the fresh
version of any of these legumes seen in
the United States (unless you find them
in an Indian grocery store), and that’s
why I believe it’s harder in the West to
connect the dots.
Legumes include lentils, beans, and
peas. Believe it or not, peanuts are
technically legumes and not nuts. This is
why someone with an allergy to peanuts
may also be allergic to other seeds
grown in pods—lentils, beans, and peas.
