Now, just because there seem to be
hundreds of different-looking bags on the
shelves does not mean there are
hundreds of varieties out there. Every
whole legume is offered (in most cases)
in four stages:
- The whole form of any legume with the
skin intact. On the package label, the
Hindi word sabud or sabut before the
type of legume will indicate that it is in
its original form, with nothing removed.
This is the most wholesome form, but it
also requires more water and time to
cook.
- The whole legume without the skin.
- The split legume with the skin on (called
chilka, which means “skin” in Hindi).
