2 teaspoons ground cumin

1 teaspoon red chile powder or cayenne

- Put the lentils, water, onion, tomatoes,
potato, peppercorns, and turmeric in a
large, heavy soup pot. Bring to a boil
over medium-high heat, and then reduce
the heat to a simmer. - Cook partially covered for 20
minutes. - Meanwhile, mix together the seitan,
salt, and ground black pepper. - When the soup is finished cooking,
blend it until smooth either with an
