  1. Add the onion, carrots, celery, and
    garlic.

  2. Cook for 1 to 2 minutes, until the
    vegetables soften and the onion browns
    slightly.

  3. Add the dried lentils, salt, cumin,
    pepper, and water and bring to a boil.

  4. Reduce the heat and simmer
    uncovered for 20 minutes.

  5. Add the cooked beans or lentils and
    heat through. Serve piping hot in bowls.
