Indian salads are so easy to make and
so much fun to eat. Fresh cilantro and
spices, rather than oil, provide flavor,
making these salads some of the
healthiest around. You can use any
cooked beans or lentils, but one of my
kids’ favorites is brown whole lentils
(masoor dal). Feel free to sub any
veggies as well. I love grating in
anything and everything, from beets, to
carrots, to chopped cooked potatoes or
even celery.
