on page 63)
1 cup (150 g) chopped vegetables
(squash, pumpkin, bell peppers, carrots,
corn, cauliflower, or spinach)
1–3 Thai, serrano, or cayenne chiles,
stems removed, chopped
1 teaspoon garam masala
1 teaspoon ground coriander
1 teaspoon Roasted Ground Cumin (see
recipe on page 62)
½ teaspoon red chile powder or cayenne
