1 cup (147 g) dates, roughly chopped
(about 15 medium)
¾ cup (150 g) jaggery (gur) or dark
brown sugar
½ teaspoon ground ginger
½ teaspoon black salt (kala namak)
1 teaspoon coarse sea salt
1 teaspoon red chile powder or cayenne
1 teaspoon garam masala
1 teaspoon Roasted Ground Cumin (see
recipe on page 62)
- In a heavy saucepan over medium-
high heat, combine the Tamarind Juice,
dates, and jaggery and bring to a boil.
