Putting Snacks on a Stick
When serving appetizers, you want every bite to be packed with flavor, but
you also want these morsels to be easy and attractive to eat. Putting foods on
a stick makes food easy to handle and helps keep portions sizes down.
Chicken Satay
A satay typically is meat cooked on a stick and served with a peanut sauce. These taste
so good, though, you won’t need the sauce. With this simple marinade and the addition
of sweet blackberries, these skewers will be the first thing to go at a party.
Stage: Regular foods
Preparation time: 5 minutes
Marinating time: 20 minutes
Cooking time: 15 minutes
Yield: 12 servings (1 skewer each)
1 pound boneless skinless chicken breast, cut
into 12 long thin strips
2 tablespoon low-sodium teriyaki sauce
(^1) ⁄ 2 teaspoon sesame oil
(^1) ⁄ 2 teaspoon onion powder
12 large blackberries
Twelve 6-inch wooden skewers soaked in
water
1 In a medium mixing bowl combine the chicken, teriyaki sauce, oil, and onion powder.
Let marinate for 20 minutes.
2 Preheat the oven to 350 degrees. Thread 1 piece of chicken onto a skewer and place on
an ungreased cookie sheet. Repeat until all skewers are used.
3 Bake in the oven for 15 minutes or until the chicken is done (cut a small slit in a piece to
check the inside). Place one blackberry on each stick just before serving.
