Pork Ginger Kebabs


Easy to make and delicious when baked, this pork tenderloin kebab is perfect for any
occasion. Fresh ginger and fresh lemon juice really make this appetizer the cream of the
crop.

Stage: Regular foods
Preparation time: 10 minutes

Marinating time: 30 minutes
Cooking time: 20 minutes

Yield: 12 servings (1 skewer each)

1 pound pork tenderloin, cut into twenty-four

(^1) ⁄ 2 -inch cubes
12 cherry tomatoes
Twelve 1-inch cubes of fresh peeled and
cored pineapple
1 teaspoon fresh grated ginger
1 tablespoon canola oil
2 tablespoons fresh lemon juice
(^1) ⁄ 2 teaspoon salt
(^1) ⁄ 2 teaspoon garlic powder
(^1) ⁄ 2 teaspoon paprika
Twelve 6-inch wooden skewers soaked in
water
1 Place all ingredients except for skewers into a medium bowl, mix well, and marinate for
30 minutes.
2 Preheat the oven to 350 degrees. Thread a piece of pork, a cherry tomato, another piece
of pork, and a pineapple chunk onto each skewer. Repeat until all skewers are used.
3 Place pork skewers on an ungreased cookie sheet and bake for 20 minutes or until the
pork is fully cooked (it will no longer be pink in the middle when done). Serve hot.
