T Peach Parfait
Light, fluffy, and delicious! Peaches layered with creamy yogurt and cream cheese are
perfect with any meal. Store fresh peaches at room temperature, because storing them
in the refrigerator decreases the flavor of the fruit. If fresh peaches aren’t available, you
can substitute canned peach slices packed in juice or unsweetened frozen peaches.

Preparation time: 10 minutes
Chilling time: 2 hours
Yield: 4 servings (^1 ⁄ 2 cup each)
(^1) ⁄ 2 cup plain nonfat Greek yogurt
(^1) ⁄ 4 cup fat-free cream cheese, softened
(^1) ⁄ 4 cup part-skim ricotta cheese
(^1) ⁄ 4 teaspoon vanilla extract
2 tablespoons sugar substitute
2 medium peaches, peeled and sliced
1 In a medium bowl add the yogurt, cream cheese, ricotta, vanilla, and sugar substitute
and blend with an electric mixer for 2 minutes or until smooth.
2 Place^1 ⁄ 4 peach in the bottom of an 8-ounce glass and top with 2 tablespoons of the
cream mixture. Top with another^1 ⁄ 4 peach and 2 more tablespoons of the cream
mixture. Repeat for three additional glasses. Refrigerate for 2 hours before serving.

Here we take the old ambrosia recipe and make it bariatric friendly by reducing the
sugar and fat and keeping the coconut flavor with extract. Use fresh fruit when it’s
available, but you can substitute thawed frozen fruit if needed to make this refreshing
dessert any time of the year.
