Cookin’ a Quick Chicken Dinner


Tender and moist Chicken with Tomato-Mushroom Sauce, found in Chapter
9, has a hint of white wine, tastes great, and looks great with the colorful
vegetables in it. Don’t worry about serving this to kids with wine in the sauce.
Very little wine is used, and the alcohol cooks out. However, if you like, the
wine can be substituted with chicken broth. The dish takes about 20 minutes
to cook, just enough time to make the pasta.

Menu:

✓ Chicken with Tomato-Mushroom Sauce (Chapter 9)

✓ Whole-wheat pasta tossed with olive oil and shredded Parmesan cheese
✓ Fresh cut watermelon
