SHERKASIYA (Circassian Chicken)


1 chicken, 3 oz each of shelled walnuts,
almonds and hazel nuts, rice, paprika
and cayenne to taste, salt, 2 onions,
butter.
Boil the chicken in the usual
way, cut it into 4 pieces and
arrange it in the centre of a dish of
boiled rice.


The following sauce is served
with it. Pound the walnuts,
almonds, and hazel nuts in a
mortar with the paprika and
cayenne and salt. Fry the chopped
onion in butter and add the
pounded nuts and a little of the
chicken stock, and when it is thick
