Heat a large pan for two minutes. Put in cornmeal and dry roast
for five minutes, stirring occasionally. During this time slowly add
all the spices, except coriander. Add oil and ghee, and keep
stirring. Add the coriander, and hot water as you stir to avoid
lumps. Add sweetener before serving.


Drinks


Food and drink seem to go hand in hand. However the body
digests solid and liquid foods differently, and each has a very
different effect on the body. To summarise the various theories, it
seems that sipping a drink at room temperature with your meal is
fine. Adding a slice of lemon to this drink will also help support
digestion. Washing your food down with gulps of ice water or hot
drinks is discouraged, as it suppresses important digestive
activities. You could enjoy a drink as a meal in itself (try some of
our fruit juices with seed for example) or leave at least 30 minutes
before the meal without large amounts of liquid and wait one hour
after for best effects.

Some fair-trade organic dark tea, preferable from a quality
plantation (Clipper Teas are a good example). If you are caffeine
free use rooibosch, which is an excellent substitute Itbsp fresh
peppermint, also substitutes the equivalent of three tea bags


1.2 litres milk (your choice, most work well)
