TEQUILA SUNRISE SALAD

FOR THE SALAD:
2½ CUPS MIXED GREENS
¼ CUP BLACK BEANS, RINSED AND DRAINED
1 PLUM TOMATO, CHOPPED
1 SCALLION, SLICED
½ AVOCADO, PEELED AND SLICED
1 TEASPOON CHOPPED CILANTRO
FOR THE DRESSING:
1 TABLESPOON TEQUILA
1 TABLESPOON ORANGE JUICE
1 TEASPOON LIME JUICE
1 TEASPOON EXTRA-VIRGIN OLIVE OIL CRACKED BLACK PEPPER
Mix the salad ingredients in a bowl. Mix the dressing in another bowl and pour over the salad. Toss
to coat.
