1 CUP FROZEN BABY LIMA BEANS
1 CUP FROZEN CORN KERNELS
½ SMALL ONION, DICED
1 CLOVE GARLIC, MINCED
½ RED BELL PEPPER, DICED
1 TEASPOON EXTRA-VIRGIN OLIVE OIL
½ CUP SHREDDED LOW-FAT CHEDDAR CHEESE
SALT AND PEPPER
1. Place the frozen beans and corn in a colander and run hot water over them until thawed. Drain
well.
2. Sauté the onion, garlic, and bell pepper in the oil in a nonstick skillet over medium heat for about 4
minutes. Stir in the vegetables and cheese. Season with salt and pepper.
Makes 2 servings.

To save fat calories, make your soup a day before eating and chill in the refrigerator. The fat
will rise to the top, where it's easy to scrape off with a spoon. To reduce the fat content of
creamy soups without losing the creaminess, replace the traditional roux (flour cooked in fat)
with pureed soup vegetables.
