GREEN GOBBLER LASAGNA

1 EGG
1½ CUPS FAT-FREE RICOTTA CHEESE
½ TEASPOON GROUND BLACK PEPPER
1 TABLESPOON MINCED GARLIC
1 TABLESPOON DRIED OREGANO
1 CAN (28 OUNCES) CRUSHED TOMATOES
6 OVEN-READY LASAGNA NOODLES
3 CUPS TORN BABY SPINACH LEAVES
1½ CUPS FINELY CHOPPED
SKINLESS ROAST TURKEY
3/4 CUP SHREDDED PART-SKIM
MOZZARELLA CHEESE
1. Preheat the oven to 375°F. Coat a 12-by-8-inch baking dish with cooking spray.
2. In a small bowl, beat the egg, then mix with the ricotta and pepper until well-blended. Stir in the
garlic and oregano.
3. Spread ¼ cup of tomatoes over the bottom of the baking dish and place three noodles overlapping
slightly on top. Spread on half of the ricotta mixture, half of the spinach, half of the turkey, half of the
remaining tomatoes, and half of the cheese. Top with the remaining noodles, ricotta mix, spinach,
turkey, tomatoes, and cheese.
4. Loosely cover the dish with aluminum foil and bake for 45 minutes. Let sit for 5 minutes before
serving.
