PENNE AND THE JETS
(Number of Powerfoods: 6)
12 OUNCES WHOLE WHEAT PENNE PASTA
2 TABLESPOONS EXTRA-VIRGIN OLIVE OIL
1 CLOVE GARLIC, MINCED
½ CUP SUN-DRIED TOMATOES, CHOPPED, SOAKED IN WATER, AND DRAINED
2 TABLESPOONS CHOPPED FRESH PARSLEY
1 TABLESPOON CHOPPED FRESH BASIL
10 OUNCES BABY SPINACH
4 OUNCES FETA CHEESE, CRUMBLED
½ CUP KALAMATA OLIVES, PITTED
½ CUP CHICKPEAS
Cook the penne per package directions. Drain. Heat the oil in a large skillet over medium-high heat.
Sauté the garlic for 1 minute. Add the spinach and tomatoes, and sauté until spinach starts to wilt.
Turn off heat. Add penne and the rest of ingredients. Toss and serve.
