4 OUNCES WHOLE WHEAT SPAGHETTI
1 TEASPOON EXTRA-VIRGIN OLIVE OIL
1 CLOVE GARLIC, MINCED
¼ CUP PART-SKIM RICOTTA CHEESE
½ CUP 1 PERCENT MILK
1 CUP DRAINED CANNED SALMON
SALT AND PEPPER
2 TABLESPOONS SHREDDED PART-SKIM
MOZZARELLA CHEESE
1. Cook the spaghetti according to the package directions. Drain and return to the pot.
2. Heat the oil and garlic in a large skillet over medium-low heat for 1 minute. Add the ricotta and
milk and stir to combine. Add the salmon and simmer for 5 minutes. Thin with additional milk if
needed. Pour over the spaghetti and season with salt and pepper. Sprinkle with the cheese.
