COFFEE WITH DESSERT
Make this coffee-flavored tiramisu a day ahead so it can chill properly.

1½ CUPS RICOTTA CHEESE
½ CUP LIGHT CREAM CHEESE
½ CUP AND 1/3 CUP SUGAR
3 TABLESPOONS COCOA
1 EGG YOLK
1 TEASPOON VANILLA
3 EGG WHITES
3/4 CUP STRONG, PREPARED COFFEE
3 TABLESPOONS COFFEE-FLAVORED LIQUEUR 16 LADYFINGER COOKIES
1. In a food processor, combine the ricotta cheese, cream cheese, ½ cup sugar, cocoa, egg yolk, and
vanilla until smooth; transfer to a large bowl.
2. Beat the egg whites in a bowl until soft peaks form. Gradually add 1/3 cup sugar and beat until stiff
peaks form. Fold the egg whites into the ricotta mixture.
3. Combine the coffee and liqueur in a small bowl.
4. Arrange half of the cookies in the bottom of a 9-inch square baking dish coated with nonstick
spray. Sprinkle with half of the coffee mixture. Spread half of the ricotta mixture on top. Repeat one
more layer. Cover and chill overnight.
