Auntie Anne's Soft Pretzels


You can create this popular mall food at home. Auntie Anne's has more than 1,500 locations
nationwide.

INGREDIENTS | YIELDS 12
1½ cups warm water
11/8 teaspoons active dry yeast
2 tablespoons brown sugar
11/8 teaspoons salt
1 cup bread flour
3 cups regular flour
2 cups warm water
2 tablespoons baking soda
Coarse salt, to taste
4 tablespoons melted butter


1. Preheat oven to 400°F.
2. Add water to a mixing bowl and sprinkle yeast into it. Stir to dissolve.
3. Add the brown sugar and salt. Stir to dissolve.
4. Add the flour and knead the dough until it is smooth and elastic.
5. Let the dough rise at least ½ hour.
6. While dough is rising, prepare a baking soda water bath with 2 cups water and 2
tablespoons of baking soda. Be certain to stir often.
7. After the dough has risen, pinch off bits of dough and roll into a long rope (about ½′′ or less
thick) and shape.
8. Dip each pretzel in the soda solution and place on greased baking sheet. Allow the pretzels
to rise again. Sprinkle with coarse salt.
9. Bake them in the oven for about 10 minutes, or until golden. Brush with melted butter and
serve.
