INGREDIENTS | YIELDS 3½ CUPS
1 cup corn kernels
1 cup diced zucchini
½ cup diced yellow onions
½ cup diced tomatoes
½ cup diced roasted Anaheim chiles
2 teaspoons salt
½ teaspoon black pepper
2 cloves finely chopped fresh garlic
½ teaspoon fresh chopped oregano


1. Place all ingredients in a mixing bowl and mix well.
2. Saute in a skillet for 6–8 minutes until all the vegetables are cooked.

INGREDIENTS| YIELDS 4½ CUPS
2 cups diced mangoes
1 medium peeled, seeded, and diced cucumber
1 finely minced jalapeño
1 diced medium red pepper
¼ diced red onion
¼ cup fresh chopped cilantro
Juice of 1 lime
1 tablespoon sugar
1 pinch salt


Place all ingredients in a medium bowl and mix well.
