4 boneless chicken breasts


1. For the marinade, mix all ingredients in a baking dish.
2. Add chicken and marinate for at least 4 hours, or up to 24 hours.
3. Remove the chicken from the marinade and discard marinade.
4. Cook chicken on a hot grill for about 10 minutes on each side.

El Pollo Loco
El Pollo Loco means “the crazy chicken” in Spanish. The chain specializes in marinated grilled
chicken that is flame broiled over an open grill right before your eyes. The restaurants are mostly in
the southwest and California. The menu offers healthy options with steamed fresh vegetables and
salads in addition to the chicken.


El Torito Guacamole


Guacamole is an avocado dip and side dish that has become very popular throughout the
restaurant world. Serve it in salads, burritos, and on burgers.

INGREDIENTS | SERVES 2–4
2 halved avocados
1 small crushed diced chili pepper
Juice of ½ lime
½ cup pico de gallo
1 tablespoon garlic powder


1. Cut open the avocado, remove the pit, and scoop the avocado flesh into a mixing bowl.
2. Add the chili peppers to the avocado, along with the lime juice, and mash with a fork.
3. Add the remaining ingredients and mix well.
