More About the Transition Diet
Now we come to the evening meal. There should always
be at least 4 to 5 hours between each meal. The digestive
system must have time to do its important work efficiently.
The evening meal must start with some kind of fresh
vegetable salad or raw fruit. If at the noon meal you had a
large raw vegetable salad, now you might want a different
raw salad. Maybe you would enjoy just a large coleslaw
(grated or chopped cabbage) salad; a cabbage, raisin and
carrot salad or a raw grated beet and cabbage salad. There
are so many healthy salads a person can select! We have so

Many people like to change occasionally from the
raw vegetable salad to some kind of fruit salad. This is
perfectly fine since a delicious fruit salad is not only
tasty, but it is a real toxin fighter! Fresh fruits are very
aggressive. They will help dissolve and flush the toxic
poisons out of the body. You should eat your fruit salad
at the first part of the meal. Our principle is always to
eat something raw at the beginning of meals. But when
you eat a fruit salad at the beginning of the meal you
should always wait 10 minutes before you start eating
your hot food. Fruit leaves the stomach very quickly
and prepares the way for the hot foods.
You may now have 2 cooked vegetables – one of them
should be of the yellow variety and the other of the
green variety. You could have a dish of lightly steamed
or baked carrots and peas or a dish of steamed greens
such as chard, kale, spinach, mustard or turnip greens
with tomatoes and garlic. These yellow and green
vegetables are rich in vital vitamins, minerals and other
wonderful nutrients. We prefer you start now to enjoy
healthier vegetarian meals. Slowly wean yourself off
animal protein foods and dairy products. Remember the
body requires only a small amount of protein, see pg.17.
No one can tell you exactly just how much of these
animal foods you can tolerate without problems arising.
