Bacon-wrapped
Beef with Honey-
Balsamic Sauce
Want a steak dinner in 30 minutes? Opt
for medallion cuts––they come in single-
serve portions and cook faster!
Serves 2
Prep Time 10 minutes
Cooking Time 20 minutes
2 (100-gram, 1-inch-thick)
beef rump medallions
salt and pepper
2 strips bacon
1 tablespoon unsalted butter
1 tablespoon olive oil
1 clove garlic, crushed
1 sprig rosemary
100 grams French beans, trimmed
1 tablespoon balsamic vinegar
½ teaspoon honey
1 Preheat oven to 450°F.
2 Season beef with salt and pepper.
Wrap a bacon strip around each
medallion and secure with a toothpick.
3 Heat butter and olive oil in an
ovenproof pan over medium-high heat.
Sear steak, about 1 minute per side.
4 Add garlic and rosemary. Place pan

6 to 8 minutes for medium doneness
(145ºF on a meat thermometer).
Transfer steak to a wire rack and allow
to rest for 5 minutes before serving.
5 Meanwhile, place the same pan
over medium heat and sauté beans for
about 2 minutes. Set aside.
6 In the same pan, combine balsamic
vinegar and honey; allow to reduce for
about 2 minutes. Drizzle over steak and
serve with French beans on the side.
