Cheese straws
You don’t need to be a professional

twists. Start by rolling out a block
of thawed store-bought puff pastry
ÕÌ>LÕ̦|^8 inch thick. Brush the
top with egg wash and sprinkle with
grated queso de bola before cutting
it into 1-inch-wide strips. Take both
ends of a strip and twist them around
each other. Repeat with the rest of
the strips. Place them on a parchment
paper-lined baking sheet and bake
in an oven preheated to 400°F until
puffed and golden brown. Let cool for
10 minutes before serving.
Lacy cheese frico
Whip up the perfect delicate garnish
for soups, salads, and sandwiches by
making queso de bola crisps. Take

two- to three-inch-wide rounds, three
to four inches apart on a parchment
paper-lined baking sheet. Bake in an
oven preheated to 350°F for 10 to

Cheesy dinner rolls
Transform dinner rolls into a gooey,
savory treat! Brush melted butter on
top of a loaf of sweet dinner rolls. Top
with a generous sprinkling of queso
de bola, quick-melting cheese, and
cheddar cheese. Bake in the oven or
toaster oven for 10 to 15 minutes, or
until cheese has melted. Serve warm.
Warm cheese spread
Share the cheesy love by making a
savory spread to go on top of crackers
and toast. Beat together cream
cheese, mayonnaise, a pinch of sweet
paprika, and a big handful of shaved
or grated queso de bola. Place in an
ovenproof dish and bake in a very hot
oven for 10 to 15 minutes or until nice
and bubbly.
Festive fondue
If gooey cheese dips are more your
style, try your hand at fondue. Toss
iμÕ>i>ÃÕÀiÃvwiÞ}À>Ìi`queso
de bola and cheddar cheese with a
generous spoonful of cornstarch in
a bowl. Heat a good splash of dry
white wine, a bay leaf, a few whole
black peppercorns, and a crushed
garlic clove in a medium saucepan.
Remove aromatics then slowly whisk
in the cheese mixture. Cook over low
heat until smooth and thick. Serve in
a fondue pot with bread, cured meat,
and pickles.
Quick cheat’s Alfredo
Sometimes, the only thing a warm
bowl of pasta needs is a little bit of
cream and a whole lot of cheese.
Skip the fuss of making a roux and
béchamel sauce, and serve up freshly
cooked thick-cut pasta (like fettuccine
and pappardelle) with a twist of black
pepper, a splash of all-purpose cream,
and a heavy dose of shaved queso de
bola. The heat of the pasta will bring
everything together and make an
instant cheesy sauce.

cut into thirds. Brush the warm corn

Egg white omelet
Queso de bola can make for a healthy
breakfast, too. Lightly beat three large
egg whites seasoned with salt and
pepper until light and foamy. Cook
over medium heat in a nonstick frying
pan for one to two minutes. Top with
grated queso de bola, herbs (we
like chives and parsley), and freshly
cracked black pepper. Once cooked
thoroughly, fold the omelet over and
serve immediately.
Baked fruit and cheese
For something a little bit sweet and
a whole lot savory, serve queso de
bola wedges with a dish of warm,
freshly baked fruits. Toss a handful
of cleaned, seeded fruits (we like
peaches, pears, and apples) in an
ovenproof dish with a few tablespoons
of honey and several cracks of freshly
ground black pepper. Bake in the
oven for 20 to 30 minutes or until soft
and caramelized. Serve with cheese
slices and a glass of sparkling wine.

holidays. Make a big batch of cheesy
seasoned breadcrumbs, which you
can keep well past Christmas day.

dried oregano, salt, and freshly
ground black pepper. Keep in an
airtight container in a cool, dry place
or in the freezer for an extended
period, and use to coat everything

to vegetables.
Crunchy green beans
Use your cheesy new queso crumbs
to give your greens extra crunch. Toss
together French green beans, olive
oil, minced garlic, salt, pepper, and
half a cup of queso de bola-seasoned
breadcrumbs in an ovenproof dish.
Pop in the oven for 30 minutes and
serve hot, alongside a hearty main.
