Nutmeg is the round, rough,
brown seed of an evergreen
tree native to the Moluccas,
also known as the Spice Islands
of Indonesia. It’s been a highly
prized spice since ancient
times. Sweet and aromatic,
nutmeg is used in many
cuisines, including Indonesian,
Indian, Middle Eastern, and
European. Its versatility lends
well to both sweet (think
pumpkin pie) and savory (like
creamy béchamel sauce)
dishes. To get the most of its

and grate them only when

Yuletide Spiced Hot Chocolate
Makes 1 cup
¼ cup milk
2 (20-gram) pieces
sweetened or
unsweetened
tablea
1 small
bark cinnamon
5 cloves
¼ teaspoon freshly
grated nutmeg,
plus extra
to garnish
brown sugar
whipped cream,
marshmallows,
and caramel
syrup (optional)
Combine ¾ cup water, milk,
tablea, cinnamon, cloves, and
nutmeg in a small saucepan
over medium heat. Whisk to
dissolve tablea. Add brown
sugar to taste. Strain into a
cup; top with whipped cream,
marshmallows, and caramel.
Sprinkle with grated nutmeg.
Serve hot.
