■ 3tbsp chopped

Heat the oil in a
large frying pan,
add the onion and
pepper and fry over
a high heat until soft
and golden. Reducethe heat and add
the garlic, paprika,
cumin and chilli. Stir
well and cook for 30
seconds to release
the flavours.2
Add the tomatoes,
then simmer
uncovered for
about 5 min until
the mixture has
thickened slightly.
Season to taste.3
Reduce the heat
and make wells
in the mixture, then
crack an egg into each. 4
Simmer over a
medium heat until
the eggs are cooked
to your liking. 5
Sprinkle with
parsley and serve

Heat the oil in a
medium frying pan,
add the onion and gently
fry for 1 min. 2
Add the kale and
sweetcorn to the
pan and stir-fry for 3 min
until the leaves have
wilted. Season with salt
and pepper.3
Gently flake the tuna
and add to the pan.4
Beat the eggs with
the chilli and salt and
pepper, then pour into
the pan and stir well.5
Cook for 2 min,
stirring occasionally
until most of the egg has
set. Shake the pan to
level, then continue to
cook for 3 min.6
Put the pan under
a hot grill and cook
for a final 2-3 min until
the top is golden and
the egg has set. 7
Transfer to a board
and cut into wedges.
Serve warm or cold with
salad on the side.
