small g loaf (a Healthy Extra)
spread with Marmite
Lunch
Really quick rice: grill Mattessons
Unsmoked Turkey Bacon Rashers for
minutes on each side, then chop.
Meanwhile, microwave a g pouch
of Uncle Ben’s Special Mushroom
Rice (½ Syns) according to the pack
instructions. Stir in lots of spinach
leaves and the Mattessons rashers
Dinner
Lemony pasta with greens

Crunchy,
herby, zingy,
delicious!
For the sauce, put the garlic, basil
and fromage frais in a small food
processor or blender and pulse into
a pesto-like consistency. Add the
lemon zest, juice and stock, season
with salt and whizz again.
Bring a large saucepan of water
to the boil. Add the pasta and cook
for minutes. Tip in the broccoli
and green beans and boil for a
further minutes. Add the peas
and courgettes and boil for a final
minutes. Drain well, then tip
back into the saucepan.
Stir in the lemony sauce with
most of the chives until everything is
coated. Divide between bowls and
scatter a quarter of the Parmesan
over each with the remaining chives.
