(a Healthy Extra) with milk from
your daily allowance and lots
of mixed berries

Lunch
Jacket & beans: microwave a pricked
baking potato until soft. Top with
piping-hot baked beans and coleslaw
made from shredded cabbage, grated
carrot and finely chopped apple
mixed with  tbsp fat-free natural
fromage frais and  level tbsp
extra-light mayonnaise ( Syn)

Dinner
Steak with Parmentier root veg
(see recipe right)

Drain a can of
chickpeas and
whizz in a food
processor with

- garlic cloves,
lemon juice,
a big dollop of
fat-free natural
yogurt and salt
and pepper until
fairly smooth.
Put some aside
in the fridge for
tomorrow’s
lunch and enjoy
the rest spooned
onto cucumber
lengths

and chips

EVERYDAY EASY
Serves €
Ready in about €‚ minutes
g celeriac, peeled and cut
into small cubes
g parsnips, peeled and cut
into small cubes
g raw beetroot, peeled
and cut into small cubes
g sweet potato, peeled
and cut into small cubes
Low-calorie cooking spray
 garlic cloves, crushed
 sprigs fresh rosemary, leaves
finely chopped
 tbsp finely chopped fresh
flat-leaf parsley
 tbsp fat-free vinaigrette
½ red onion, diced
 beef fillet steaks, visible fat removed
g kale leaves, woody stalks removed

 Preheat your oven to °C
fan
°Cgas . Spread the root veg
on a large, non-stick baking tray in
a single layer. Spray with low-calorie
cooking spray and season. Bake for
 minutes, turning halfway.
 Meanwhile, mix the garlic,
rosemary and parsley together in
a small bowl. In a separate bowl,
mix together the vinaigrette and
diced red onion.
 Mix the garlic and herb mixture
through the vegetables and bake
for a further ‚ minutes. Turn off the
oven and leave the veg inside to
keep warm. Meanwhile, preheat
a non-stick griddle or frying pan to
hot. Spray the steaks all over with
low-calorie cooking spray and season.
 Cook the steaks for -„ minutes on
each side, or until done to your liking.
Toss the vinaigrette mixture through
the kale and serve with the steaks
and Parmentier root vegetables.
