sandwich together with spinach

until lightly toasted

together tsp each of the paprika,
oregano, chilli powder and mustard
powder. Rub all over the pork with
some salt and bake for hours.
Increase the oven temperature to
°Cfan °Cgas . Spread the
wedges on - non-stick baking trays
in a single layer, spray with low-
calorie cooking spray and season.
Bake the wedges and pork for
minutes, turning the wedges halfway.
Meanwhile, in a saucepan, mix
together the remaining spices with
the Worcestershire sauce, red wine
vinegar, garlic, sweetener and
passata. Bring to the boil, then
simmer for minutes, stirring
occasionally, until thick.
For the slaw, mix together the
cabbage, apple, spring onions and
coriander. Combine the fromage
frais, mayo, lemon juice and vinegar,
then toss through the slaw.
Use forks to shred the pork,
then stir the shredded pork through
the sauce. Serve with the sweet
potato wedges and a quarter of the
slaw per person.

.kg pork shoulder joint, visible fat
and skin removed (this should leave
you with about g meat)
tsp each of sweet smoked paprika,
dried oregano, mild chilli powder and
mustard powder
kg sweet potatoes, cut into wedges
Low-calorie cooking spray
tbsp Worcestershire sauce
tbsp red wine vinegar
garlic cloves, crushed
level tbsp sweetener
g passata
For the slaw:
½ small white cabbage, shredded
green apple, cored and diced
spring onions, chopped
½ small pack fresh coriander, leaves
roughly chopped
g fat-free natural fromage frais
tbsp extra-light mayonnaise
Juice of lemon
tbsp white wine or cider vinegar
Preheat your oven to °Cfan
