Cucumber & Beef Nori Rolls


SERVES 4 (Makes 20 pieces) PREP 25 minutes + 20 minutes to chill COOK 30 minutes COST $3.25 a serve


1¼ cups long-grain brown rice
3 cups water
1 tablespoon honey
1 avocado, mashed
4 nori sheets
1 Lebanese cucumber, seeded,
cut into matchsticks
2 thin slices roast beef, quartered
¼ cup salt-reduced light soy sauce


1 Rinse rice under cold water until water
runs clear; drain. Place rice and the water
in a large heavy-based saucepan over high
heat. Cover; bring to the boil. Reduce heat
to low; cook for 30 minutes or until water
is absorbed. Remove from heat. Stand rice,
covered, for 5 minutes. Stir with a fork to
separate grains; chill for 20 minutes. Add
honey and avocado; stir to combine.

2 For each nori roll, place a nori sheet,
shiny-side down, on a bamboo mat, with
shortest edge facing you. Using damp fingers,
gently press a quarter of rice mixture over
nori sheet, leaving a 2cm strip at one end.
Using your finger, make an indent along
centre of rice. Top with a quarter each of
cucumber and roast beef. Place, seam-side
down, on a chopping board. Trim ends; cut
roll into 5 pieces. Repeat to make 4 rolls in
total (20 pieces). Pack with soy sauce.

+ RIGHT WAY UP Nori has both
a rough side and a shiny side – you
should always place the nori sheets
shiny-side down.
+ EVEN PIECES Use a large, sharp
knife to cut rolls, wiping the blade
clean between cuts.

into your child’s meals.
