Four-cheese
& Sage Pizza
SERVES 4 PREP 15 minutes

COST $3.50 a serve

1 quantity Basic Pizza Dough
(recipe, p62)
1 clove garlic, crushed
2 tablespoons light olive oil
100g reduced-fat mozzarella, sliced
⅓ cup reduced-fat grated tasty cheese
100g reduced-fat fresh ricotta
½ teaspoon cracked black pepper
50g mild blue-vein cheese
24 sage leaves, torn
Sea salt flakes, to serve (optional)

1 Preheat oven, with 2 oven trays, to
220ºC/200ºC fan-forced. Divide Basic
Pizza Dough into 4 equal portions. Roll
each portion out between 2 sheets of
baking paper to a 14cm disc. Place on
preheated trays.

2 Combine the garlic and oil in a bowl.
Brush pizza bases with garlic oil. Top
each base with mozzarella and tasty
cheese. Combine the ricotta and black
pepper in a bowl. Top pizzas with
ricotta mixture, blue-vein cheese
and sage leaves.

3 Bake for 15 minutes or until cheese is
golden and pizza bases are crisp.
Sprinkle with sea salt flakes (if using).
