To mark the arrival of spring, I was
seriously thinking about bootin’ gluten,
when a bag of bread rolls rocked up to
recipes+ headquarters. Helga’s had
read my thoughts! Looking seriously

Rolls have such an awesome texture,
I couldn’t believe they don’t contain
gluten! (By the way, did you know that
one in 10 Australians is on a gluten-free
diet?) Packed

gluten-free rolls

burgers, below, a go.

Mighty Lamb Burgers
400g lamb mince + 400g can brown
lentils, rinsed, mashed + 1 egg white
+ 1 red onion, grated + Cooking oil
spray + 4 Helga’s Gluten-free Soy &
Linseed Hamburger Rolls, split + 20g
baby spinach leaves + 4 slices canned
beetroot + 1 tomato, sliced + 4 pan-fried
eggs + 4 slices tasty cheese + ½ cup
gluten-free mayonnaise + 2 tablespoons
gluten-free sweet chilli sauce

Combine mince, lentils, egg white and
onion in bowl. Shape into 4 patties. Heat
a char-grill pan over moderate heat.
Spray patties with oil. Add to grill; cook
for 4 minutes each side for medium.
Transfer to a heatproof plate. Cover
with foil; rest for 5 minutes. Toast rolls.
Place roll bases on plates. Top with
spinach, beetroot, a patty, tomato, an
egg and cheese. Whisk mayonnaise
with sweet chilli sauce; dollop over
cheese. Add roll tops. Serves 4
