FESTIVE SHOWSTOPPER

5 Using a paintbrush, paint a line of
edible glue where the rope piece
will attach and then carefully adhere
your first rope of trimmed paste.
When it is in position use something
with a straight edge to make sure
that it is totally vertical, a smoother
or sugarpaste spacer will work.

6 Using the same method attach
the next rope directly above the
darker green rope. Once in place
continue with the blue rope of
the sky trimming the top edge to
match the top edge of the tier.
Continue around the entire cake
until your design is complete.

7 Using the fir tree silhouette
mould, create various fir trees a
darker shade of the remaining
green adjusted paste. These can
be placed upon a clean surface and
dusted with a pearl lustre dust to
give a frosted effect.

8 Using any spare blue adjusted
paste roll out tapered sausages
of paste and then attach them
randomly to the cake board and the
top surface of the base tier using a
little edible glue. These will become
the foundations for the snow drifts.

9 Roll out strips of white sugarpaste
and lay them over the area of blue
sausages. Leaving folds of sugarpaste
against the base of the cake will further
enhance the snow drift image. Once
in place, detail the windy snow drifts
using a veining tool. Do not worry if
some of the blue shows through, this
will only add to the frosty look when
the snow is dusted with lustre.

10 Using edible glue randomly
attach the trees around the base of
your cake complementing your side
panel designs. Layering them will
enhance the overall appearance.
Trim one of the smallest fir trees
down in height and make a small
arrangement of them at the base of
the top tier.

11 When all of the trees are in place,
use a soft dusting brush to dust the
snow drifts with a pearl lustre dust;
you are aiming to just have patches
of lustre to represent icy surfaces.

12 Make approximately 100g of white
adjusted paste and create a large rope
border from the rope borders mould
and attach it around the top of the
base tier to conceal the top edge.

13 Using a plunger snowflake
cutter, create eight snowflakes
in white adjusted paste and then
attach them evenly spaced around
the top tier.

14 Grandpa gnome: using 80g of
dark green adjusted paste, create a
smooth cone which is approximately
10cm tall with a flat base. Using a
cone tool push into the base of the
paste cone twice.

15 Roll out two teardrops of brown
paste, then using a little edible glue
insert them into the holes at the base
of the paste cone to create feet.

16 Using an edible marker or a
scribing tool, mark a line around the
paste cone approximately 6.5cm
from the base. This will be the line
for his beard, arms and hat brim.
